摘要

The authors studies on video-image analysis of carcass quality and composition are discussed. These studies have shown that video analysis is a suitable technique for carcass grading, and is applicable to young bulls of different genotypes and to cows. The method has its greatest applicability in the estimation of meatiness classes, cut weights and the composition of cuts. Estimation of carcass composition in young bulls is independent of genotype, and has high precision.
