Global trade in aromatic plants is based on 400 different type of commercial essential oil with a value of 5 billion USD in 2011 (Rajeswara Rao et al, 2012). During the process of distillation of aromatic plant material, hydrophilic components (polarcomponents) of the essentials oil remain present in the condensed water and the products known as aromatic water, phytosol, hydrosol, hydrolate or distillate water and contains important group of water soluble compounds; most of the farmers/ producer discard such fraction known as hydrosol obtained during the course of distillation and after the separation of essential oil. The economic value of the hydrophilic essential oil fractions of aromatic oils that escape into the hydrosols was estimated to be worth US$ 50-100 million in India (Pangarkar, 2008). Owing to the biological and organoleptic properties of hydrosol they have been used in food, flavouring and cooking industry, cosmetic industry (shampoo, conditioner and room spray), perfumery (soap, toiletries), aromatherapy (spray, steam bath) and medicine industries (massage, skin care, antiseptic) along with agriculture as biological agents, insect pest repellents and for fertilization of soil. Hydrosol possesses biological properties like antifungal, antibacterial and antioxidant. Rose and orange hydrosols (rose and orange waters) are traditionally used in medicine for skin care and in food for the preparation of cakes and beverages in the different parts of the world, whereas, basil, mint, rose,
