Mushroom quality in the supply chain is an ongoing challenge but one of the most important and persistent challenges we face as an industry. Quality is perhaps the hardest to get right throughout the supply chain, as there can be many different players. Nevertheless, there is much that can be done to minimize these factors that negatively impact mushroom quality. Mushrooms have a relative short shelf life. Once nutrient and water supply is cut off, the mushroom adapts to sustain gill growth and sporeproduction. Changes in the mushroom to meet these new demands are noticeable and include discoloration, water loss, lengthening of the stem and opening of the cap.
