摘要

The physicochemical properties of crude flaxseed (Linum usitatissimum L.) oil, which was extracted using different extraction methods and during storage, were determined. The fatty acid (FA) composition of flaxseed oil was analyzed during extraction and storage time. The results revealed that the crude Flaxseed oil obtained by Modified Bligh Dyer extraction method had satisfactory quality and stability parameters than the crude oils obtained by other extraction methods. Changes occurring during extraction and storage in the content of phenolic acids, total tocopherol content, phytosterols content, peroxide value, p-anisidine value, and stability against oxidation (Rancimat induction time) in flaxseed oil were studied. Major bioactive compounds content showed a drastic decrease during storage. Flaxseed oil showed an important free radical scavenging activity towards 1-1-diphenyl-2-picrylhydrazyl (DPPH) free radical.
