From Europe to the U.S., oat-based foods are increasingly attracting the interest of major food and beverage companies. But while the giants deliberate over just how best to exploit oats' intrinsic health benefits in products that consumers will accept, a small family-owned Finnish company has got ahead and solved the problem and in so doing has created an entirely new, fast-growing - and profitable - category of foods that (in Europe at least) has the potential to give soy products some stiff competition.
