Cashew apple rich in Vitamin-C and minerals is fleshy, juicy, sweet and has a pleasant flavour. At the same time the apples possess certain medicinal properties apart from higher content of Vitamin-C and minerais. The apples are used in curing scurvy,diarrohea, uterine complaints, dropsy, neurologic pain, rheumatism and cholera. Apples are also used as medicine for women after parruration. It has an advantageous defattening effect on human beings (Vaidehi and Ray, 2000). Interestingly only 10-15 percent of the cashew fruits are used to produce country made liquor called Fermi in Goa (Nanjundaswamy, 1984). The fruit wastage is mainly due to its disliking qualities such as astringency and acrid principles since the fruits are rich in tannin (0.33% or 60 to 382.5mg/100ml), which causes throat and tongue irritation after eating (Vaidehi et al, 1990). But the fruits can be made suitable for consumption by removing the undesirable tannin and preparing value added products such as clarified juice, syrup, squash, canned fruit, pickles, jam, jelly and chutney etc. hi addition to this, dissemination of cashew apple processing techniques could generate additional income to the farmers and to rural economy and employment opportunities (Vaidehi and Ray, 2000).
