摘要

The relationship between molecular structure and odor has been a major tool of fragrance ingredient design since the late nineteenth century. It also has led to attempts to develop theories of how we perceive odors. The application of structure/ odor relationships (SORs) to odorant design has been very successful, and there are numerous commercial examples of odorants designed with the help of SORs. But what of SOR-based olfaction theories?
