A study of the national potato market is reported here, the study having been made to determine the possibilities of preserving potatoes by irradiation. It begins with a presentation of production data by region and type of potato. The data used are averages calculated from production figures of the last few years.nNext is an estimate of losses in these years compared to those in France.nWe did not have reliable consumption data because much of the potato crop is consumed at the places where it is raised, with no commercial marketing and thus with no control. To estimate the monthly consumption, we assumed two types of ideal markets in which the price difference between months of highest and lowest quotations is 5 and 1 units, respectively. From these two types of market, we determined an average, but representative, market, which is obtained by improving preservation methods and in which the price difference between the lowest and highest quotations is 3 units. Values obtained in this way are not exact, but they provide information that is better the more the potato market is normalized.
