The invention relates to a process for treating and packaging minced meat of the type comprising the following steps: a) minced meat is supplied at a first temperature; b) dividing said minced meat into substantially equal portions of minced meat; c) exposing said portions of minced meat to a second temperature below 273 K and to said first temperature. In step b) said minced meat is divided into spheroidal minced meat portions (16), said minced meat portions each having a core (32) and an outer surface layer (30) surrounding said core, while at step c) exposing said minced meat portions (16) to said second temperature for a determined period of time to cause desiccation of said outer surface layer (30). And after step c), said portions of minced meat (16) are conditioned, according to a step d), per unit of a plurality of portions.
