The invention relates to a process for treating and packaging minced meat of the type comprising the following steps: a) minced meat is supplied at a first temperature; b) dividing said minced meat into substantially equal portions of minced meat; c) exposing said portions of minced meat to a second temperature below 273 K and to said first temperature.
