To provide a method for producing a processed wheat for beverage that can stabilize the extractability even when extracted with water of various hardness.SOLUTION: Provided is a method for producing processed wheat for beverage, characterized by including a primary processing step for obtaining a primary processed wheat by bringing a raw wheat and a heating body into contact to adjust the arabinoxylan content in the wheat within a range of 5 to 70 mg/100 ml, and a secondary processing step for obtaining a secondary processed wheat by fluidization-conveying the primary processed wheat while heating in order to adjust the ratio of monosaccharide content to polysaccharide content (monosaccharide/polysaccharide) within a range of 0.002 to 0.100.SELECTED DRAWING: None
