[Purpose] To respond appropriately to the needs for obesity prevention and improvement of the intestinal environment that people who are suffering from problems such as obesity by using only white rice with carbohydrate as the main ingredient. A pseudo rice having an obesity preventing function and an intestinal environment improving function having a taste and texture almost the same as those of conventional rice, and a method for producing such a pseudo rice as a low calorie food. [Constitution] Containing at least 90 to 99% by weight (or 80 to 99% by weight) of alginic acid (for example, sodium alginate) and 1 to 10% by weight (or 1 to 20% by weight) of salt capable of becoming salt. In other words, it contains a small amount of a coagulant made of calcium chloride or the like) and is processed to have a size and shape similar to that of white rice. [Selection] Figure 1
