To separate a new yeast, which can brew a sake having a high ability to produce malic acid and succinic acid and a fruity fragrance, from a kudzu flower and to produce a sake or the like.SOLUTION: A yeast of Saccharomyces cerevisiae sampled from a kudzu flower is separated and selected, and it is used to brew a sake having content of malic acid and succinic acid and a fruity fragrance.SELECTED DRAWING: Figure 1
