Use of an emulsion comprising: (i) 6% - 18% by weight (% by weight), based on the total weight of emulsion, PUFA (polyunsaturated fatty acid) and (ii) 12% - 35% by weight, based on the total weight of emulsion, of at least one emulsifier, which is a polymeric hydrocolloid from a plant source, (iii) 5% -40% by weight, based on the total weight of emulsion, of at least one adjuvant and (iv) 18% - 40% by weight, based on the total weight of emulsion, of water, in a liquid food product.
