The present invention relates to a process for the detoxification of wheat flour (Triticum spp.) And glutathione by the formation of suprimolecular structures with the citrus fruit. The invention also relates to the detoxified flour and glutathione in which isotope values of 65% and 88% of celiac disease are obtained when compared to non-modified or unnatural flour and gluten, respectively.
