The present invention relates to a method for extracting functional components from Glycine max, and a Glycine max extract thereby, and specifically, to a method for extracting functional components which are edible from the Glycine max, and the Glycine max extract thereby. The method for extracting functional components from the Glycine max comprises the following steps: roasting the Glycine max for regulating the flavor and aroma of the Glycine max in which foreign substances are removed by washing; crushing the roasted Glycine max to produce a crushed mixture; introducing the crushed mixture into a leach bag and leaching the crushed mixture in a low-temperature solvent; separating the functional components from the leach bag by a pressing or extrusion process; filtering the separated functional components; and lyophilizing the filtrate.;COPYRIGHT KIPO 2017
