Composition as a water in oil emulsion comprising an aqueous phase dispersed in an oil phase, and containing: a. at least one fatty acid ester of a polyol chosen from the esters of hydroxystearic acid and of dicarboxylic acids obtained by esterification of a mixture of polyglycerol with (i) a hydroxystearic polyacid, with 2 to 5 units of 12-hydroxystearic acid; (Ii) aliphatic, linear or branched dicarboxylic containing 4 to 14 carbon atoms, and (iii) branched or linear fatty acids, saturated or unsaturated, containing from 16 to 20 carbon atoms, and b. at least one hydrophobically modified polysaccharide chosen from inulins modified laurylcarbamate groups.
