A process for preparation of a water-dispersible pigment formulation in solid form : The present invention relates to a process for the preparation of an encapsulated curcumin formulation of improved photo-stability in solid form from Turmeric spice (Curcuma tonga) of Zingiberaceae family. Curcuminoids, soluble in organic solvents like acetone and ethyl acetate but insoluble in water at acidic or neutral pH, are known to lose color upon exposure to air and light due to oxidation reactions. There is need for development of a process to prepare products containing curcumin wherein the color of curcumin is protected and preserved. In the present invention, curcumin has been encapsulated using vegetative oil , selected additives and edible gum and which afford enhancement of photo-stability of the pigment. The innovation encompasses encapsulated colorant of uniform particle size which is water- dispersible pigment formulation in solid form of improved photo-stability , particularly degradation of said pigment formulation being prevented when exposed to UV light.
