PROBLEM TO BE SOLVED: To provide a meat processing technology capable of softening meat to hardness in an easily eatable degree even by a person (an aged person or a care receiver) having low chewing/swallowing function, while maintaining an original shape and keeping an original appearance.SOLUTION: There is provided process liquid for modifying meat containing following components; A1 component: alkaline protease 0.002-0.2 mass%, A2 component: neutral protease 0.001-0.1 mass%, and B component: edible fat 3-30 mass% and water 30-97 mass%.
