PURPOSE: A method of manufacturing a fermented composition of giant embryo brown rice is provided to enhance functional materials including GABA etc by using garlic fermented solution in which saponin, antioxidant including polyphenol etc, and diverse enzyme are enhanced. CONSTITUTION: Peeled garlic is pressurized at a temperature of 100-190C in a pressure of 1.4kg-2.7kg/cm^2 for 3-7 hours, and garlic concentrate is arranged by removing solids. Garlic fermentation solution is obtained by self-fermentation of the garlic concentrate. Giant embryo brown rice is put in water, soaked and pulverized after the water is removed. The 10-50 parts by weight of water is mixed with 100 parts by weight of the giant embryo brown rice which is pulverized. The mixture is mixed with 10-50 parts by weight of the garlic concentrate based on 100 parts by weight of the giant embryo brown rice which is pulverized and fermented. And the fermented composition of giant embryo brown rice is manufactured.
