PROBLEM TO BE SOLVED: To provide a method of producing a beef or beef processed food which can mask unpleasant livestock odor such as glass odor and animal odor and having an excellent texture without complicating the production process and without affecting the taste of the beef.;SOLUTION: It is discovered that the livestock odor is masked, and further, the texture is improved by adding arginine to a meat lump of beef.
