PROBLEM TO BE SOLVED: To provide a softening method for surely softening a vegetable food material while retaining the form, and suppressing syneresis from the vegetable food material, and to provide a softened vegetable food product having excellent texture, softened while retaining the form by the softening method, and suppressed in syneresis.;SOLUTION: The softening method is a method for softening a vegetable food material and includes enzyme-treating the vegetable food material with an enzyme treatment liquid containing enzyme, agar with a high melting point (not less than 90°C), and at least one kind of polysaccharides different from the agar.
