PURPOSE: A high quality of apple vinegar using ultra fine apple is provided to ensure high functionality in exterior, color, and flavor. CONSTITUTION: A method for manufacturing apple vinegar comprises: a step of inoculating 5%(v/v) apple wine to 40 mesh of ultra fine apple juice and performing alcohol fermentation; a step of inoculating 10% of seed vinegar to the juice and stirring at 15C for 60 days; and a step of performing acetic acid fermentation.
