Revitalizing yeast for brewing process, comprises partly revitalizing yeast cells by electroporation using pulsed electric energy or by electromagnetic pulse, and removing wort and beer with the young yeast from a fermentation tank
The method comprises partly revitalizing yeast cells by electroporation using pulsed electric energy or electromagnetic pulse, and removing wort and beer with the young yeast from a fermentation tank (2, 3) and subjecting to electroporation in a continuous process. The revitalization is carried out by electroporation during fermentation and/or storage, and yeast harvesting and/or yeast treatment. The electroporation is carried out with a pulse voltage of 0.45-10 kV, an electric field strength of 200-1500 V/cm, a pulse duration of 5 minutes-2 hours, and/or a repetition frequency of 10-25 Hz. An independent claim is included for a device for revitalization of yeast for brewing process.
