Disclosed is an acidified protein beverage comprising 0.2 percent to 1 percent cellulose gum, at least 0.025 percent of gellan gum and a particulate. Also disclosed is a method of making the above acidified protein beverage comprising the steps of: - dispersing a protein base into water and mixing at about 50 degrees Celsius; - preparing a cellulose gum solution by dispersing cellulose gum powder into water and mixing at about 50 degrees Celsius; - cooling the protein dispersion and the cellulose gum solution to ambient temperature; - combining said protein dispersion and cellulose gum solution; - dry blending gellan gum and sugar then adding the gellan gum and sugar blend to the protein/cellulose gum solution; - adding a particulate solution to the combination and adjusting to about pH 4.0; - processing the final combination of the protein, cellulose gum, gellan gum/sugar, and particulate by heating to about 70 degrees Celsius, homogenizing, and heating to about 121 degrees Celsius; and - cooling to about ambient temperature.
