PPROBLEM TO BE SOLVED: To provide interesterified oil having less transisomer content, and bringing excellent physical properties as hard stock use for a plastic oil-and-fat composition, and to provide a plastic oil-and-fat composition using the interesterified oil. PSOLUTION: (1) The non-selective interesterified oil has constituent fatty acid substantially comprising saturated fatty acid, 10-30 wt.% of 12C saturated fatty acid, 2-10 wt.% of ≥22C saturated fatty acid, constituent fatty acid remaining substantially comprising palmitic acid (as P hereinafter) and stearic acid (as S hereinafter), and a relation of S/P≥3. (2) The interesterified oil has ≥85 wt.% of saturated fatty acid in the constituent fatty acid. (3) The interesterified oil is used for hard stock.
