BETA-CAROTENE OIL-IN-WATER DISPERSION PREPARATION METHODS AND OTHER OXIDATION STABLE CAROTENOIDS, PREPARED FROM WATER-DISPERSABLE GRANULATES WITH ELEVATED CAROTENOID CONCENTRATIONS.
A method for forming a diluted juice beverage, said method comprising: 1) formation of a dispersion: a. providing a sufficient amount of water dispersible microencapsulated beads, comprising at least 5% colloidal carotenoid, said carotenoid being a-carotene, such that the dispersion comprises 0.01 to 0.5% a-carotene. b. releasing the carotenoid from the microencapsulated pearls. C. bringing the released carotenoid into intimate contact with a sufficient oily phase comprising a fatty or oily nebulizing agent and an oily loading agent, so that the dispersion comprises 0.1 to 25% of the fat or oil nebulizing agent and 0 at 20% of the oily loading agent and that the carotenoid released is stable against oxidation when it is in the presence of an aqueous phase; d. combining a sufficient amount of emulsion stabilizer with a colloidal carotenoid, oil phase and aqueous phase, so that the dispersion constitutes 1 to 30% of the emulsion stabilizer; and e. combining a sufficient amount of water with the colloidal carotenoid, oil phase and emulsion stabilizer so that the dispersion constitutes 25 to 97.9% water. 2) combination: a. from 0.2 to 5% of said dispersion; b. from 0 to 40% of aroma solids selected from fruit juice, tea solids and mixtures thereof; C. from 100 ppm to 1000 pm of a preservative selected from sorbic acid, benzoic acid, alkali metal salts thereof and mixtures thereof; d. an amount of an effective water-soluble polyphosphate to improve the anti-microbial potency of said preservative; and.
