PROBLEM TO BE SOLVED: To provide low-salt pickled ume (Japanese plum) reduced in salt content, and processed food using the low-salt pickled ume: and also to provide a method for producing the low-salt pickled ume reduced in salt content.;SOLUTION: The pickled ume is produced through adding salt and bacteriocin to raw ume.
