The invention relates to the construction of a recombinant Saccharomyces cerevisiae oenological yeast strain for the PGU1 gene, which overexpresses an endopolygalacturonase. Said yeast strain synthesises and secretes high concentrations of a polygalacturonase/pectinase which can be used in the oenological industry. The invention enables wine clarification and filtration processes to be improved without increasing the level of methanol in said wines or altering the aroma of same.
