PPROBLEM TO BE SOLVED: To produce a functional raw material which abundantly contains L-arabinose, D-xylose, and various kinds of oligosaccharide and has a function favorable for health, a high safeness, and a good fragrance. PSOLUTION: In the method for producing the functional raw material, bran or defatted bran or unpolished rice is treated with an enzyme system containing a hemicellulase enzyme, a liquefying enzyme, and a saccharifying enzyme and then treated with yeast. In addition to thus yielded functional raw material, there are provided a functional food, a health food, a medicine composition, and a cosmetic composition, all containing the functional raw material.
