The temperature monitoring method has a light beam (22) directed onto the tissue sample (21) via a beam splitter providing at least 2 partial beams fed along light paths of differing length, for reflection from different depths within the tissue sample, with generation of an interference pattern in an analysis unit (23) and evaluation of the interference pattern in an evaluation unit (24), for obtaining the temperature shift and the temperature of the tissue sample. The tissue sample temperature can be regulated by heating via a controlled energy light beam (27). An Independent claim for a device for monitoring the temperature of a tissue sample is also included.
