PPROBLEM TO BE SOLVED: To provide a method for extracting and separating useful materials from a soy sauce cake by which the useful materials such as isoflavone, a peptide and an amino acid are separated from the soy sauce cake having a high salt concentration so as to be separated from the salt, and extracted with good selectivity. PSOLUTION: The useful materials in the soy sauce cake are extracted into a solvent by bringing the soy sauce cake into contact with the extracting solvent selected from the group consisting of 1-propanol, 2-propanol, butyl alcohol, acetone, ether and dioxane. The extracted soy sauce cake is brought into contact with a desalting solvent selected from the group consisting of water, methanol and ethanol to desalt the soy sauce cake by dissolving the salt in the soy sauce cake into the desalting solvent.
