The present invention relates to the construction of transgenic soybean lines in which the expression of genes encoding seed storage proteins is modulated to effect a change in the seed storage protein profile of transgenic plants. The modification of the seed storage protein profile can lead to the production of new soy protein products with unique and valuable functional characteristics.
