PROBLEM TO BE SOLVED: To stably obtain a safflower yellow pigment preparation having low viscosity and high color definition by efficiently removing saccharide component, protein component and blown-transforming component, etc., without depending on the difference of lots of petals in the kinds of safflower petals, growing districts, buying period, storage state, etc. ;SOLUTION: A safflower extract is brought into contact with an active carbon to absorb solid content containing a pigment component in the carbon. Then, a solid content other than the pigment component is eluted with a weakly alkaline solution which is an aqueous solution containing at least one kind of a salt selected from alkali metal salt, alkaline earth metal salt and ammonium phosphate. Then, the pigment component is extracted with a strongly alkaline solution comprising an aqueous solution containing at least one kind of compound selected from hydroxides of alkaline metals; hydroxides of alkali earth ammoniums and ammonium hydrogen carbonate.;COPYRIGHT: (C)1998,JPO
