This invention PROPOSES vinous yeast expression of genes from other organisms. SPECIFICALLY REFERS TO THE EXPRESSION OF ANY OF THESE genes encoding enzymes capable of degrading the polymers CELLULAR CONSTITUENTS OF THE WALLS OF PLANTS, AND WHOSE EXPRESSION IN THE WORT influences wine aroma. The method is based in the cloning of the cDNAs of these genes, constructing gene fusions between these cDNAs HIGH AND ESTABLISHING PROMOTERS yeast expression vinous, and the introduction of these recombinant constructs vinous YEAST STRAINS FOR INDUSTRIAL USE. EXPERIMENTS WITH THESE microvinification RECOMBINANT YEAST vinous demonstrate the production of a wine improved in flavor profile.
