PURPOSE: To obtain the subject foods by facilitating the infiltration of taste into waste cattle beef hitherto hard to process to use it suitably for producing the subject foods. ;CONSTITUTION: These foods are obtained by the following processes: 1st process: cattle beef is dipped into a sauce composed of each appropriate amount of water, common salt, sugar, pepper and garlic; 2nd process: the beef is boiled well in a second sauce composed of each appropriate amount of soy and Japanese rice wine on a weak fire for a specified time; 3rd process: the well-boiled beef is cooled for a specified time; 4th process: the beef is again boiled well for a specified time on a weak fire and then cooled; and 5th process: the resultant beef is defatted and vacuum-packed.;COPYRIGHT: (C)1995,JPO
