PURPOSE:To cultivate the titled microorganism, by controlling the free amino acid composition in a culture medium in cultivating a microorganism capable of producing lipase in a culture medium containing an organic nitrogen source consisting essentially of an amino acid, etc., as a main nutrient source. CONSTITUTION:A microorganisms, belonging to the genus Rhizopus, Aspergillus, Mucor, etc., is cultivated to produce lipase. In the process, the free amino acid composition in a culture medium is controlled. The culture medium contains an organic nitrogen source consisting essentially of an amino acid or amino acid and a peptide as a main nutrient source and the ratio of the amino acid other than leucine, lysine, phenylalanine and arginine in free amino acids present in the organic nitrogen source to the organic nitrogen source is =10% for individual amino acids.
