PURPOSE:To separate and purify an inhibitor of mutation having a carcinostatic action, by treating a broccoli juice with an anion exchange resin, and by eluting the adsorbed fraction with a dil. salt solution. CONSTITUTION:A juice obtained from a washed broccoli containing a substance to inhibit the mutation of mutagens, is treated with an anion exchange resin, e.g. DEAE-cellulose, and the adsorbed fraction is eluted with a dil. salt solution, separated, and purified. The inhibitor thus obtained has characteristic absorption spectra at 280-404nm and a molecular weight of about 55,000, and is stable to heat and inactivated by a proteinase. Preferably, a pretreating step e.g. centrifugation of the juice to obtain a supernatant liquid, is combined with an aftertreating step, e.g. gel filtration and ultrafiltration to improve the effeciency.
