PURPOSE:The protein grains are uniformized to remove the grassy smell characteristic in soybean milk to produce nutrient-rich fermented soybean milk which is digested rapidly in human bodies. CONSTITUTION:Soybeans or defatted soybeans are immersed in water and, when the protein and fibrous substance become easily separable from each other, they are ground, boiled and filtered to prepare soybean milk. The soybean milk is subjected to fermentation in a vessel by use of at least one selected from yeasts, enzymes and lactic bacteria, the fermented soybean milk is homogenized to uniformize the protein grains and to remove the grassy smell of the soybean milk.
