摘要

The correlation of the Brabender Viskograph-E and the Rapid Visco Analyser (RVA-4) was studied,especially the relationship of viscosity units of wheat flour between the two instruments.Moreover,the evaluation was made of the pasting profiles such as peak viscosity,end viscosity,minimum viscosity and the gelatinization temperatures for testing wheat flour by the Brabender Viskograph-E and RVA-4.In this study,14 different cultivars native wheat flour and 7 commercial wheat flour were tested in both instruments at the same concentration.%选用14种具有代表性的强、中和弱筋中国小麦品种及7种市售小麦粉为研究对象,采用波通快速黏度仪(RVA-4)和布拉班德E型黏度仪(BV)测试小麦粉的糊化黏度特性.以此,来研究这两种黏度仪之间相关关系、黏度单位之间的换算、不同品种小麦粉的峰值黏度的变化规律.两种黏度仪所采用的黏度单位是不同的,RVA-4使用的黏度单位有两种,分别是RVU(Rapid Viscosity Unities)和cp(centi-poise).两者之间的关系为:1RVU=12cp.布拉班德E型黏度仪的单位为BU (Brabender Unities).
