摘要

The measurement of enzymatic ATP-breadown in the muscle of fish provide useful information on the changes of the freshness during ice storage. A method for the measurement of ATP-breakdown products with ion-pair reversed phase HPLC has been optimised. The HPLC method has a good repeatability, linearity and detection limit.
