The present paper discusses predictive microbiology in relation to seafood quality. Growth of Listeria monocytogenes in challenge tests with cold smoked salmon was compared to predictions from available models. Some predictions were highly inaccurate but validated models were useful for reformulation of products with increased safety. Models showed that a small pH reduction combined with addition of lactate may inhibit growth of L. monoytogenes in cold smoked salmon considerably.
