Characterization of a Marker of Mechanical Damage in 'Clemenules' Clementines

The main objective of this work was to determine a marker to characterize the fruit that has experienced mechanical damage. Clementines (Citrus reticulata Blanco ' Clemenules')were artificially damaged applying scratching, moderate compression and severe compression. Physiological changes were recorded during 8 days of storage at 20°C to determine their ability to characterize the damaged fruit. Ethylene production and respiration rates were determined using a flow-trough system at 20°C. Scratch damage and moderate compression caused significant increases in ethylene production. Scratch damage also caused a significant increase in respiration rate and in weight and texture loss probably because of water loss through the compromised rind. None of the different types of mechanical damage led to a change in rind colour. They all caused an increase in internal maturity after 3 and 8 days of storage at 20°C and significant increases in respiration rates during the entire experimental period. We propose to use respiration rate as a marker to characterize the damaged fruit.
