摘要

Each year in the United States there are an estimated 33 million cases of foodborne illness. At least a quarter of these illnesses could have been prevented by using safe food handling and preparation methods. The National Food Safety Database (NFSD) was produced to provide food handlers with information about ways to prevent foodborne illness. This database contains comprehensive food safety information from numerous academic, government and private organizations. Resources were designed to be used by educators, state and federal public health agencies, consumers, and food service and food processing industries. The global, easy-to-use search system offers rapid access to information that can be viewed, printed, or reformatted for customized use.The National Food Safety Database contains over 1,300 individual documents, including the: 1993 FDA Food Code, 1994 revised USDA Complete Guide to Home Canning, University of Georgia's So Easy to Preserve freezing and drying fact sheets, numerous food handling publications contributed by a dozen states, North Carolina's Notebook of Food and Food Safety Information, 1995 USDA Pathogen Reduction Program Regulations, FDA HACCP Fish and Fishery Products Hazard and Control Guide, University of Florida's Disaster Handbook, USDA's Foodborne Illness and Information Center's Database, and slide shows containing over 300 color images.
