Studies have been made of how the nature of the biopolymer-biopolymer interface influences the bulk mechanical properties of model biopolymer composites. The morphology of the composites studied consists of one gelled biopolymer (a polysaccharide) dispersed in another (gelatin) in the form of discrete spherical domains. Composites are produced by a route that consists of producing the polysaccharide phase separately as a suspension of microgel particles and subsequently embedding them in the continuous phase. Two composite systems are investigated (agarose/gelatin and k-carrageenan/gelatine). We have shown that these two pairs of biopolymers have very different interfacial properties and the effects of this on composite mechanical properties are discussed.
