The ingestion of a wide range of foods by humans is accompanied by an equally wide range of responses to those foods. While there are examples of raw foodstuffs containing major allergens or toxins requiring special processing before ingestion, such sources do not usually form part of the human diet. For the most common food sources, it is usual for only a small fraction of the populace to experience negative responses upon ingestion. In most cases, the contribution of a specific food item to the total diet is small enough for avoidance to be relatively straightforward, although diligence by the affected person is critical in the most severe cases. A significant exception is in the case of celiac disease, an enteropathy directly related to the ingestion of some cereal proteins, particularly those of wheat (1).
