Japan's per capita annual consumption of pota-toes is about 24 kg, which is less than the world aver-age of about 33 kg and no more than about one-third of the consumption in the North America and Europe (FAO survey). This consumption includes all uses, in-cluding in home cooking; as a starch material; in fried potato products, and packed salads; and by fast food restaurants and other take-out outlets such as delica-tessens.
