When you're sick, your mother recommends chicken soup. Cough drops tout the benefits of added zinc, vitamin C, Echinacea and other herbal extracts. Yogurt and other dairy products have been reinvented as "functional foods" with added live bacterial cultures and fiber. What is the common theme here? Nutritional support of the immune system. Nutrition plays a critical role in immunity, and some nutrients appear to possess immunomodulatory or even stimulatory effects when supplemented to the diet. The field of nutritional immunology, where interactions between diet and immune function are investigated, is a relatively young science, with concentrated research effort occurring mostly in the last 30 years. Comparatively, the application of immuno-nutrition to the feeding of horses is only in its infancy. While we are not yet in a position to provide proscriptive diets that will enhance immunity of disease-susceptible horses, a handful of studies have evaluated specific nutrients that may someday prove useful for improving host defense. This paper will highlight research on nutrients that have been fed to the horse with the specific intent to modulate immune function, including omega-3 fatty acids, vitamins E and C, and various herbs.
