Although carbohydrates present the least expensive source of energy and are widely used in terrestrial animal production, the mechanism of their digestion, assimilation and utilisation in fish, especially carnivorous species, remains relatively unclear, and their dietary inclusion level low. Information assisting in the more efficient carbohydrate digestion and utilisation could improve artificial feeds and lead to more cost-effective diets, sparing the most expensive ingredient, protein, for growth.Upon evaluating the potential of a species for carbohydrate utilisation, the principal criterion is the presence and levels of digestive carbohydrases, along with feeding preferences, relative gut length and digestive surface area.
