A low cost passive technology based on the evaporative cooling principle has been developed which consists of a double walled system made of bricks and cement filled up with coarse sand and baked earthen cups. The water filled up between double chamber provides the sufficie.nl moisture/humidity inside the inner chamber for preserving vegetables / fruits. It has revealed to reduce temperature fluctuations inside enclosure of the cool chamber and maintains high humidity as compared to outside environment. Few cool chambers with different treatment at their bases were fabricated to make a comparative study to preserve the vegetables for a short duration. This study revealed that cool chamber can preserve successfully vegetables for short duration in summer and winter seasons.
