Good eating quality is one of the most important objectives of rice breeding in Japan. Koshihikari and its pedigree cultivars, with good eating quality, are widely grown. The sensory test is the most effective method to determine eating quality, but it has been used only with breeding materials at advanced genera-tions because of the requirement for large amounts of grain, time, and labor.
